Cooking (without defrosting):

Oven: preheat oven to 210°C (gas mark 7) for 12 to 18 minutes.
Brush fillets with oil and place in a dish, skin side up.
Place in the oven at half-height and cook for 15 to 18 minutes.

Pan-fry: 6 to 9 minutes.
Cook the fillets in a hot frying pan with a little fat, first over high heat to sear them skin-side down. Turn them over halfway through and continue cooking over low heat on the flesh side.
